Lobster thermidor cooked by Anthony Sargeant

Anthony J Sargeant cooked this ‘retro’ dish last night – but Lobster thermidor is a classic for good reason. The fresh live lobster was bought yesterday morning at Birmingham Market. Lobster can be quite a subtle taste which is easily lost in frozen or chilled pre-cooked lobster. This lobster was delicious and the thermidor sauce was made with a delicate home-made lemon-sole fish stock from the freezer and prosecco.
