A beautiful thick Lemon Sole caught by a Cornish Day-Boat and bought at market the next day. It is one of the best flat-fish in the opinion of many. The next posts will show each stage in filleting. (at this point a vertical incision has already been made along the length of the midline vertically down onto the backbone ready for the flexible filleting knife to be slid under the meat along the length of this cut – see next post)
